Fidèle is the flagship wine of the domaine and perhaps the purest expression of Pinot Noir from the Côte des Bar. The cuvée is sourced from several parcels: Tirmy, Biaune, Châtel and Fonnet planted to approximately 25 year old vines. These vineyards combine clay-limestone topsoils with both Kimmeridgian and Portlandian limestone subsoils, creating a wine that balances power and minerality. The name "Fidèle" refers to the wine's faithful expression of its terroir. Fermentation occurs with indigenous yeasts in 4 years old Burgundian oak barrels, without chaptalization or selected yeasts. Malolactic fermentation takes place naturally, and the wine is bottled without dosage. Certified Organic and Biodynamic.
Proprietor and winemaker Bertrand Gautherot is widely recognized as a pioneer of biodynamic viticulture in Champagne. His farming methods strictly avoid synthetic pesticides, herbicides, and chemical fertilizers in favor of holistic ecosystem management, indigenous yeast fermentations, and natural animal-powered composts.
