Champagne Vouette Sorbee is the creation of husband and wife Bertrand and Helene Gautherot. The Domaine is situated in Buxieres-Sur-Arce in the Cote des Bar. Five hectares of Pinot Noir, Chardonnay and Pinot Blanc planted on Kimmeridgian slopes and a small part on Portlandian called Sorbee.
Since 1998, the vineyards have been farmed in biodynamic and certified Demeter. For years, the farming has been very mindful of the environment: compost made on the estate, only use of horse or light tractor, fruit trees reintroduced, domesticated cows...
The Champagne is made in an artisanal and natural way since the first release in 2001 of Fidèle. Fidèle is a reminder to remain simple and natural in the cellar: 100% Pinot Noir, one harvest, only wild yeast, no chaptalization, 100% vinification in oak, 100% natural malolactic fermentation, no dosage. This minimalist approach in winemaking is the same with Saignée de Sorbée (2003) and Blanc d’Argile (2004).
