Cabernet Sauvignon from Pays d'Oc, Languedoc-Roussillon, France; full bodied and dry, with dark brambly fruit and spice, hints of cedar, graphite, and stewed cherry, earthy with medium acid, and big smooth oaky tannins. Organic

The Cabernet Sauvignon comes from Cabardès. It's a 100ha estate located north of Carcassonne, at the foot of Montagne Noire where we find low fertility soils particularly suitable to wine growing and offering qualitative yields. Its typical micro-climate, in between the Ocean and Mediterranean, offers Cabardès the possibility to combine Bordeaux grapes ( Merlot, Cabernet Sauvignon and Cabernet Franc) to Mediterranean one (Syrah and Grenache). Average yields are 45hl/ha.
The harvest is done at an optimum maturity. Total de-stemming of grapes before maceration and fermentation in stainless steel vats. Temperatures carefully controlled. After a light pressing, juices are selected before a complete malolactic fermentation.
