"My final pick for November and all the lovely dinners that come along with it is a Cabernet Sauvignon from Spring Seed. In 2003, the owner and operator of Spring Seed, Joch Bosworth, won organic farmer of the year in all of Australia. He was the first certified organic producer in McLaren Vale, and he was honored for moving the organic farming movement forward in the country. He’s a big deal. All of his wine labels are inspired by vintage seed packets, a homage to the thriving biodiversity in his vineyards. His Cabernet Sauvignon is beautiful, brambly, and medium plus in body, with notes of juicy black fruit, cherry lozenge, cassis, plum skin, and violets. With a little air, aromas of rosemary, vegetal spice, sour cream, coconut, and blueberry emerged. The more I smelled and tasted this wine, the more it gave to me. This is what excellent McLaren Vale Cabernet Sauvignon should be. I would pair this with charcuterie, grilled/roasted mushrooms, eggplant, and green vegetables, fatty beef, steak burritos, and anything with chimichurri. I hope you love this one as much as I do!"
