One of the most interesting things I've ever tried! Made in Hanoi, Vietnam, from yellow sticky rice that is hulled, milled, and unpolished, the rice is left out to ferment, and when it becomes a liquid, another fermention begins. The latter fermentation takes place in a mix of amphora, terracotta, and oak, then made sparkling via the Traditional Method. It's medium in body with notes of bruised Granny Smith apples and chicken broth/soup, with medium acidity and a sour, nutty finish. Amazing with food or by itself, and guaranteed to generate some seriously wonderful conversation.
