"This month’s wine club focuses mainly on the Iberian Peninsula, specifically Spain! Doré comes from a fairly new DOP in Spain, Cebreros, which was established in 2018. Located northwest of Madrid, Cebreros is known for its rare pink granite soil structure. Generally, granite is beneficial in warmer climates because it forces the vines to go deep into the ground for their water supply, making them more resilient to extreme conditions such as heat and drought. Doré is 100% Chasselas, a grape native to Switzerland, and in my opinion it is truly stunning. This wine has it all: tropical fruit, citrus, flowers, and wet stone, with hints of honey and marzipan. My favorite part is the texture. The silkiness along with the bright acidity make this wine super food-friendly. I would pair this with white wine and garlic based pasta dishes, white fish, and lighter chicken dishes."
