60% Xarel-Lo and 40% Parellada from Penedés, Catalonia, Spain; medium bodied and dry with notes of yellow apple, overripe starfruit, bruised pineapple, lemon citrus, yellow flowers, and marzipan, with medium acidity and a dry finish. Organic and Biodynamic, no added SO2 but still drinks beautifully on Day 2.

"Ramón Jané Tinc Set Ancestral Blanc is a lively, biodynamically farmed sparkler from the northeastern Penedès region of Catalonia, Spain. Made from 60% Xarel-Lo and 40% Parellada, the wine is bottled without added SO₂, yet it remains fresh, unflawed, and impressively delicious even on the second day after opening. In the vineyard, Jané follows biodynamic principles with an almost obsessive focus on soil life, working without chemicals, avoiding plowing to keep the microbial ecosystem intact, and harvesting everything by hand to preserve the vitality of the fruit. Medium in body, this wine screams the color yellow: overripe starfruit, yellow apple, and bruised pineapple, with emerging layers of yellow flowers, lemon citrus, and a soft marzipan note that rounds out the palate. With its balanced acidity, the wine has enough lift to stay refreshing while allowing the fruit to feel generous and expressive. This bottle is utter perfection with a simple cheese plate with mild cheeses alongside Marcona almonds, dried apricots, and green olives. I also recommend pairing it with fried fish and chicken dishes, shrimp pasta, white fish with romesco, or my personal favorite, paella. Serve it well chilled, but don’t rush it back into the fridge between pours so you can watch it evolve; it’s a real pleasure."
