"Nanclares y Prieto’s Dandelion is a wine I’ve been working with for several years now. Made from 100% Albariño from Rías Baixas, Spain, it feels like ocean spray captured in a bottle. Light-bodied and dry, it opens with fresh lime, salt, and white peach, while citrus pith lends structure and chalky minerals linger across the finish. The medium-plus acidity is the backbone here, lifting the fruit and making it endlessly refreshing. Alberto Nanclares and Silvia Prieto farm their vineyards organically in Cambados, using old vines rooted in decomposed granite soils just a stone’s throw from the Atlantic. Their philosophy is one of minimal intervention: native yeast fermentation, gentle pressing, long lees contact, and no unnecessary manipulation in the cellar. I love how the wine starts zesty and direct, then deepens with a quiet chalky texture as it breathes. For food, consider pairing this with Mediterranean-style dishes - think white fish tacos with cilantro and lime, shrimp ceviche, or broth-based chicken dishes. Fresh salads, olives, and hard cheeses also go well with this leaner, acid-driven style of Albariño. I recommend drinking it on the colder side but to wait a while before putting it back in the fridge to see how it transforms with air."
