"We’re kicking things off this month with a delicious Slovakian sparkler, perfect for any food-driven celebration. Hailing from the Little Carpathians region in the southwestern part of the country, this husband-and-wife team farms organically and works with low-intervention methods to let their vineyards speak for themselves. This blend of Müller-Thurgau, Pinot Gris, and Muscat is light-plus to medium-bodied and dry, and opens with bursts of yellow apple, quince, papaya, and guava, followed by notes of jasmine and honeysuckle, all wrapped in a salty, savory finish. For me, this wine’s structure is the shining star here; it’s aromatic and bold without tipping into sweetness. The medium-plus acidity and persistent mousse cut right through richer dishes, and the long finish ties each sip to the next bite. For those of you planning to enjoy this wine with your Thanksgiving feast, it will pair famously with herb-roasted turkey, whipped sweet potatoes, fried Brussels sprouts, citrus-glazed carrots, or apple-sage stuffing. It will also go extremely well with foods on the other end of the spectrum - you could consider drinking it alongside miso-ginger salmon, shrimp dumplings, tempura vegetables, soft cheeses with herbs, or a bitter greens and citrus salad.
