"From the hands of famous Austrian winemaker Michael Gindl comes the Little Buteo, or “Little Hawk,” a stunning and atypical expression of Grüner Veltliner. Gindl farms organically and biodynamically in Weinviertel, Austria, where he keeps the approach minimalist: native yeast fermentation with gentle pressing and full malolactic fermentation - the very thing that sets this dense, salty Grüner apart. The 2023 cuvée is medium to medium-plus bodied and dry, offering a wild bouquet of creamed butter, bruised orange, kiwi seed, lemon citrus, and poached pear, layered over savory herbs, citrus pith, and slate. With medium-plus acidity and a structured mineral backbone, it has all the elements of an outstanding dinner wine. For the Thanksgiving table, turkey sure, but it will more interestingly pair with cranberry-zested pork tenderloin, sweet potatoes with pecan-maple glaze, green bean casserole, or even a spinach-ricotta lasagna for a vegetarian twist. Try not to drink this one too cold, otherwise the butter and cream will overwhelm the fruity nuances."
