Derrumbes Michoacán is an exotic combination of rich and pungent agaves that are picked at their maturity and then cooked in an underground pit oven using black oak. After the agaves are cooked they are transported to a mechanical mill where they are smashed and grounded. Michoacán is fermented in underground tanks lined with pine, which adds to the herbal character.Derrumbes Michoacán is a full flavored mezcal, with savory wood smoke complemented by sweet fruit, vegetal notes and a refreshing minerality.
Very different to the Oaxaca, Derrumbes Michoacán is initially more subtle. Fresh on the nose, you find notes of green apple before more perfumed, floral notes appear. These more delicate aromas give way to a pungent sweetness, ripe pears, and notes of pine and a hint of smokiness. On the palate, you initially detect sweet characters, violets and honey but these are soon overpowered by a dry spiciness fostered by a stringent smoky character. On the finish, the dryness eventually gives way to a more sweet character that leaves a very pleasant mouthfeel.

Unique fermentation processes include; underground tanks lined with pine wood and distillation via a wooden still, all of which guarantee some of the most intriguing and unique aromas and flavours to be experienced in Mezcal.
