The grapes are gently pressed whole-cluster and settled in a cold tank for 24 hours, then fermented and aged sur lie in tank. After primary fermentation is complete, the stainless steel barrels are topped off and sealed and left untouched until bottling. Malolactic fermentation is blocked to preserve the natural acidity.
