Malbec vines are 30+ years old and planted at a high elevation in alluvial soils with decomposed rhyolite. After a cold maceration of 5 days, grapes go into stainless steel vats where fermentation is initiated by indigenous yeasts. After a 7 day fermentation, the wine sits on the skins for 20 additional days. It is then pressed to concrete tanks where it rests for 6-8 months sur lie. Lightly filtered.
