Palomino from Jérez, Spain; dry and nutty with hints of caramelized sugar, custard, artichoke, rhubard, and lemon oil, with savory undertones, medium plus acid, and a dry finish. It's like flan on steroids. This is an old wine that has the particularity of having both aging processes (biological and oxidative). Aged for at least 8-9 years in solera (3-4 years in a fino solera and 3-4 years in an oloroso solera).
