Mencia with other native red varieties from Ribeira Sacra, Spain, medium bodied and dry with notes of dried fig, Sunmaid raisins, chocolate, and pepper, with soft vegetal undertones, medium acidity, and dry, firm tannins on the finish. Organic, no added SO2, fermented and raised in stainless steel tanks.

"Guímaro Tinto comes from Ribeira Sacra DO in Galicia, Spain, where grower/winemaker Pedro Rodríguez farms old-vine Mencía (with a touch of co-planted native reds) organically across the region’s famous steep terraces. The vines root in soils of slate, schist, and granite, which lend both firmness and expressive minerality to the wine. On the nose there are notes of dried fig, boxed Sunmaid raisins, chocolate, and pepper, with subtle vegetal undertones. The palate shows medium body, soft dry tannins, and balanced acidity, so while there’s texture and depth, it stays agile. This is a wine that both comforts and intrigues (imagine yourself by a fire on a cool night amazed by how complex yet easy-drinking this wine is). Pair it with roasted pork tenderloin with herbs, mushroom risotto, grilled eggplant with smoked paprika, or a plate of aged mild cheese and roasted root vegetables. It also works surprisingly well with blackened fish tacos or a rustic beef and red pepper stew, where earth and spice echo the wine’s character. Serve it slightly cool so the vegetal and spicy notes peek through, and let it warm a bit in the glass to reveal its richer fruit tones. Try to plan to open this bottle when you can drink it all in one night; there’s no SO2 added so it’s possible it may lose a touch of its charm on Day 2."
