"We're kicking off July with one of Spain's most underrated white grapes, Xarel·lo. Produced by the Bohigas family in Penedès, this wine comes from the historic Can Macià estate, where the family has been farming for more than 600 years and is now certified organic. They harvest their grapes exclusively at night to preserve freshness and vibrancy, and this wine was produced entirely in stainless steel. It was bottled immediately after fermentation completed, and it tastes every bit as invigorating as it sounds. Medium-bodied and dry, it offers notes of wet limestone, mandarin orange, floral honey, and dried apricot, all wrapped in a crisp, chalky texture. The medium-plus acidity and tart, zippy finish beg for food (or a hot day by a creek). I'd happily pair this with grilled shrimp, fish tacos with citrus slaw, roast chicken with herbs, paella, or a simple spread of Manchego cheese, Marcona almonds, and olives. Serve it well chilled and don't be surprised if this becomes one of those bottles you reach for long after summer is over."
