"One of my favorite types of wine to drink in the warmer months is a fruity, chillable red. This entire category offers a little something for everyone, tannin and structure but also juicy and drinkable. The first red for May is delicious right out of the fridge - Mencía cofermented with a blend of white varietals from Bierzo, Spain. Medium in weight, it kicks notes of Morello cherry, black plum, violets, and cocoa, with lingering warm baking spices on the finish. Dry tannins lend just the right amount of structure to enjoy this wine with or without food. There’s a subtle hint of fennel seed that makes me want to drink this alongside sausage and peppers, and I’d also recommend pairing it with grilled chicken and green beans, tomato-based soups and stews, burgers with sautéed mushrooms, and stir fry. Dominio de Tares is a family-rooted winery located just east of Northern Portugal that focuses on showcasing the character of old-vine Mencía grown in the area’s slate and clay soils. The estate works with sustainable vineyard practices and careful hand-harvesting, while the cellar philosophy emphasizes gentle extraction, minimal intervention, and plot-by-plot vinification to preserve freshness, minerality, and a strong sense of place. Their cuvées are all excellent - perfect epresentations of terroir-driven wines from Bierzo without any pretentious fuss."
