"We’re going to wrap up May with some delicious and competitively priced Bordeaux imported by Vinotas Selections. I was excited to come across this wine because in my opinion it drinks far above its price point (a common theme among wines in the Vinotas portfolio). Domaine de L’Entre Deux Mondes has been farming their vineyards organically since its founding in 2005, and earned its Demeter certification ten years later. Their vineyards are cared for following biodynamic principles, such as using herbal teas and essential oils to strengthen vine health naturally. The Resonance cuvée is a blend of Cabernet Sauvignon and Merlot, and leans a bit more rustic in nature. It’s a touch fuller in body with notes of beef bouillon, red and black currants, eucalyptus, and bramble. There’s some mint that lingers on the finish that, when coupled with the chalky tannins and medium-plus acidity, makes for an exceptional food wine. This would be outstanding with steak and chimichurri, or herb-crusted chicken with root vegetables, grilled pork with roasted carrots, or my personal favorite - aged cheeses with cured meats and black olives. This wine loves about 20 minutes in the fridge before opening."
