"We’re staying in Burgundy here with this little treat. This wine pleasantly surprised me, as I often don’t love the Aligoté variety. I guess I tried a few too many that tasted like sweat! This one, on the other hand, is certainly salty but elegant and complex. As you may have noticed, its appearance is a little cloudy. It’s mineral forward and soft with loads of creamy lemon custard, poached pear, and stone fruit that linger perfectly on the finish. I drank this with fish and capers and it was very tasty, and I imagine it pairing fantastically with eggplant, mushrooms, anything chicken, and pasta - but I would avoid spicy foods as I think they may fight for attention in your mouth."
