Nothing speaks to me louder than Bordeaux in the Fall. Well, maybe Nebbiolo, but that’s for another month’s Wine Club. This one comes from the Castillon Côtes de Bordeaux Appellation, East of Saint Emilion on the Right Bank. It’s comprised of 70% Merlot and 30% Cabernet Franc and is rustic and earthy with layers of chocolate, cedar, pepper, and subdued bramble fruit. I also got some wintergreen and bubblegum high tones. An easy way to identify a high tone in a wine is to take in a long, slow, steady sniff, and see what’s getting caught in your sinuses - the smell that makes you blink. The old-school wine/culinary dream pairing for Bordeaux is lamb with mint jelly, and we can see why with this wine. I don’t think that’s something that Americans eat often, so instead try it with some grilled meats or vegetables. My personal favorite Merlot-based Bordeaux food pairing is roasted carrots.
