Cabernet Sauvignon and Syrah from Languedoc, France; medium to medium plus bodied and dry with notes of blackberry, overripe black cherry, pickled watermelon rind, beets, violets, roasted Pablano pepper, black pepper, ash, and dark chocolate, with earthy undertones, medium acidity, a clean texture, soft but structured tannins, and lingering black plum on the finish. Certified Organic; Cab and Syrah underwent separate natural fermentations in cement, then were blended into steel and allowed to settle for 3 months before bottling; 10ppm SO2 added at bottling.
