"San Giorgio's name comes from the legend of St. George and the dragon. In Babylonian mythology, Tiamat is the mother of the whole cosmos - the primordial goddess of the oceans and salt waters, and is depicted in traditional iconography as a dragon. The winery is located in the Oltrepò Pavese Appellation inside Lombardy, Italy, and is run by three siblings who grew up surrounded by their family's vines in Barolo. Made from 100% Pinot Nero (Pinot Noir), this wine ferments exclusively in stainless steel but then rests in a combination of steel and neutral barrels for several months before it's blended, bottled, and aged for an additional 4 months before release. I have extreme respect for winemakers who take the time to keep their wines in bottle before unleashing them on us; it makes a huge difference in the cohesion of the final product. I really liked drinking this wine. It kept changing and evolving in really pleasant and surprising ways. I got notes of ripe red cherries, dried strawberries, baking spices, orange rind and dried herbs. The acidity was my favorite part, it really cleans up the finish and kind of soothes the dry tannin. This would be great with fowl, game, mushrooms, grilled vegetables, lean steaks, cheese, cured meats, and beets. I enjoyed this wine a little chilled and it was fantastic."
