"his may be the wine that I’m most excited about this month. I've discovered that chillable reds are always in season, seamlessly fitting into everyday life! Toujours Plums is made organically in Cahors, Southwest France, and is 100% Malbec. Malbec originated in this   region, and the style is a far cry from the rich, oaky, and chocolatey profiles commonly found in Argentine Malbec. This wine is a blend of grapes obtained from old vineyard sites that  underwent carbonic fermentation and those from younger vineyards that saw a short vinification. For your reference, carbonic maceration is a winemaking process where whole grape clusters are sealed in a tank filled with carbon dioxide. This anaerobic environment encourages the grapes to ferment from the inside out so they burst without needing to be crushed. This leads to a lower-tannin and lighter bodied wine that is fruitier and fresher. Standard fermentation is completely different, and usually takes between 10 and 28 days. Toujours Plus blends the two fermentations of Malbec in a tank to let them efficiently integrate before bottling. The wine has a lighter body but is still structured, and has notes of berry compote, dried strawberries, and ripe plums, with subtle hints of baking spice, herbal undertones, and a juicy fresh finish. This is a wine you’re going to want to drink up! I recommend pairing it will a burger, meat or veggie, or grilled chicken and vegetables; anything with a little char will make this wine sing. Enjoy chilled but not too cold."
