Pinot Meunier, Chardonnay, Pinot Noir from Champagne, France; medium bodied and dry, toasty and rich, with subtle layers of smoke, ripe pear, and apricot, hints of almonds, brioche, and saline, with medium plus acid and a slightly tart and fresh finish. Org, Bio

20% Chardonnay, 70% Pinot Meunier, 10% Pinot Noir, assemblage of 2016 and 2017 vintages

This elegant Champagne comes from 25-50 year old densely-planted vines (9,000 vines/ha) treated naturally and grown in the town of Lhéry, in the Valley de l'Ardre, which is in the western part of the Marne Valley, on southwest-facing complex soils composed of clay, limestone, sand and chalk. Hand-harvested, the grapes are fermented for 2 weeks in stainless, then undergo a slow malo for around a month, with 4g/l dosage. The wine is left to sit on its lees in tank and old Burgundian barrels for 8 months, before being bottled unfined and unfiltered, then seeing another 24 months of bottle ageing.

VB signifies "Vin Biologique" (Organic Wine) and 03 is to honor the 3 grapes that made the wine.
