"We’re staying in Catalonia, Spain with our next wine, an organic white from Priorat. The Llicorella soil composition here only exists in Priorat, making it a pretty special wine producing region. Cabaler is made from Grenache Blanc and Macabeu, and tastes slightly oxidative with notes of preserved lemon, sultanas, cashews, and salted honey, with cleansing acidity and lingering florals. It has a solid medium body making it an ideal white for cooler temperatures and more substantial dishes. I’d eat this with roasted chicken and root vegetables, risottos, and seafood paired with grilled veggies and/or earthy accompaniments. Drink cool, but not too cold!"
