"To contrast the round salty Grillo, I tossed in a Zibbibo, a traditional Sicilian variety that is typically blended (with Grillo!). Ammaru is single variety wine and stylistically accurate. If you can understand this wine, you can understand Zibbibo. It’s pretty floral with hints of quince and wild muscadines, and honeysuckle lingers on the finish. The texture is the giveaway here; it’s oily and slick but still light in body. Zibbibo loves oily fish, smoked pork/chicken, and shrimp dishes. This one you’ll want to drink pretty cold."
