Fabio makes some of the best, still under-the-radar wines in the region (he's one of Ian d'Agata's favorite local producers), and this is no different. Grown on fossil-rich clay soils, these 10+ year old vines are tended organically, hand-harvested, wild-yeast fermented in stainless steel to maintain the freshness of the wine. After 8-10 months on their lees in stainless, the wine is bottles unfined, unfiltered and barely sulfured. It presents bright, dry lemon, acacia, jasmine, hints of licorice and straw notes, with a gorgeous mouthfeel and long finish. And to make it easier to enjoy, Fabio bottles this under screw-cap.
