60% Cinsault and 40% Pais from Valle del Itata, Sur, Chile; light bodied, spicey, and dry with layers of cherry and other red fruits, meat, smoke, cinnamon, nutmeg, and fine ground black pepper, with medium plus cleansing acidity and soft but sturctured tannins. Organic

"Next we’re moving on to reds with Paco’s “El Cachito,” a Cinsault/Pais blend from a nearby vineyard to his Corinto plantings. All of Paco’s vines are non-irrigated, plowed by hand, and organically and sustainably farmed. The steep terrain enables the vines to grow deep roots and produce complex, balanced wines that are        expressive and mineral-driven. El Cachito is light in body with notes of cinnamon and nutmeg with layers of cherry, smoked meat, and fine-ground black pepper. It has great structure for being so light, and a little chill (like 30-40 minutes in the fridge) makes this wine sing. It pairs excellently with steak and chimichurri; I tried it with grilled chicken tacos that I served with an avocado cilantro sauce. It was delicious together, and the wine was dangerously easy-drinking."
