Unfiltered Wine Club February 2024:

"Made from 100% Monastrell (a.k.a. Mourvédre, a.k.a. Mataro), Vestigium is made by a young winemaker, Jose Joaquín Ballesteros, in Castilla-La Mancha. Here in central Spain, the climate is arid and hot - so again deep, old roots are essential to making excellent and complex wines. This wine is fermented and aged in amphora, known in Spain as “tinaja.” It is easy-drinking but dark, with notes of dried blueberries, raisins, and Luxardo cherries, with hints of bleu cheese (yep) and a strong finish. I drank this with a stew (I’m sure you’ve all noticed now that I eat a lot of stews!), and it was AWESOME, but if you can round up some lamb and bleu cheese the pairing would be like rainbows and sunshine. Faedra, if this wine doesn’t pair with your burritos, I don’t know what will!"
