"Founded in 1997, “Fox Den Farm” is a small farm in the heart of Braga, Minho, located in the northernmost wine producing region in Portugal.  Husband and wife team Manuel Taxa and Elisabete Raposo farm grapes that are native to the region using organic and biodynamic methods. The wine you have here is made from 100% Alvarinho (or Albariño in Spain), and ferments and rests in stainless steel with no added Sulfur. This means you’ll want to drink this wine up in a day, as it may begin to lean feral with      excessive exposure to air. It’s a very serious and elegant wine, with layers of orange blossoms, citrus rind, and beeswax. It has earthy undertones but has bright acidity and a concentrated flavor profile. It would go excellently with dense fish like mahi-mahi and swordfish, and would shine with pink oily fish (salmon, steelhead trout, char), especially if served with some kind of creamy purée. Also, chicken, pork, mushrooms, and sautéed vegetable   dishes would be perfect. This wine is a great example of the high-quality and lesser-known wines coming out of Vinho Verde."
