"There is a common saying in the wine producing community: “Winemaking is 90% cleaning and 10% making wine.” The word on the street is that Martha Stoumen and her crew are so dedicated to producing clean natural wines that they are more like 99% cleaning! Maybe that math doesn’t quite add up, but you get the point. She is a stickler for rigorous cleanliness, and it shows in her wines. With only about 2mg/L of SO2 added at bottling, the rosé (and frankly all of her Post Flirtation wines) is incredibly polished and stable. You won’t have any problems drinking this wine over the course of several days, if it lasts that long! Made of a coferment of 53% Carignan and 47% Colombard, the beautiful pink color comes from an overnight maceration of the Carignan grapes (red), and then the juice is pressed off the skins and added to the Colombard (white) to begin fermentation. The flavor profile sort of mirrors the color, so to speak, with notes of rhubarb, wild strawberries, Pink Lady apples, and tart cherry, with a bright lemon zest backbone and cleansing acidity. I would call it medium in body and it has a voluptuous texture (you’ll see what I mean). Pair this with herb-driven dishes, pesto, smoked pork, ceviche, beef tartare, salmon, and mushroom pasta and you’ll be very happy. I recommend drinking it cold!"
