The 2022/23 Winter Gin is a limited edition small batch gin made right here in New York State. It's all about depth and texture, and begins with the signature Original Gin recipe and then layered in additional winter botanicals. It begins with a 24 hour maceration of wild apples that are handpicked from feral 100 year old apple trees within a few miles of the distillery. Cold steeped dried pears are then added, along with Organic Assam tea from Royal Tea New York, which offers light notes of cocoa, spice, and lovely tannins. The botanicals include juniper, coriander, cassia bark, Angelica root, wild apple, pear, assam tea, and raw honey.
