"This month we’re kicking things off with a delicious Italian Bubbly! This one drinks a little like cider, making it a perfect beverage for ushering in the cool weather. Hailing from the Pignoletto DOC in Emilia-Romagna in northern Italy, Buffo Bianco is made from...wait for it...the Pignoletto grape (how enigmatic!). The grapes spend 10 days macerating on their skins before the juice is pressed and fermented, giving the delicate aromas of the Pignoletto grape a little extra oomph. The wine is light to medium in body with notes of apples, pears, and other orchard fruits, with crisp acidity and big dry tannins on the finish. This Pét Nat would pair excellently with cow’s milk cheeses of all kinds, from mild to funky, and it’s a great way to finish a meal with friends. Remember to make sure it’s nice and cold before you open it, and to pop the top off slowly and carefully. Like most Scuola di Vino wines, this one doesn’t have any added Sulfites, so you’ll want to be sure to finish the bottle the same day that you open it."
